Is there a shortage of ways to use leftover mashed potatoes? Not really. There are potato croquettes and potato pancakes, etc., but I notice that a classic is missing from the list – potatoes duchesse – little puffy potato clouds! So, save those leftover mashed potatoes and learn how to make potatoes duchesse.
How To Make Potatoes Duchesse – The Leftovers
Practically any classic mashed potato leftovers will do the trick for making potatoes duchess. Even if they are mixed with celeriac or other weird stuff, it will still work.
How To Make Potatoes Duchesse – The Binders and Additions
The biggest addition to the mashed potatoes is egg yolk. This not only gives the mashed potatoes richness, but it also helps bind them together. Classically, egg yolks and nutmeg are the only additions with perhaps some extra salt and pepper. This of course, could be perceived as boring. Cheese is a great addition. Sour cream and other fatty goodness can also be added for flavor and richness. Fresh herbs are certainly worth considering, too.
How To Make Potatoes Duchesse – The Tricky Bit
The trickiest bit about making potatoes duchess is the piping. It’s nice to pipe pretty dollops of the mixture and slather them with egg wash to make them golden brown, but you don’t have to. It works just as well to spoon dollops or make quenelles with the potato mixture. Pretty is always fun, but sometimes pretty takes too much time and distracts from that which is important – flavor and sustenance.

- 1.5 lbs leftover mashed potatoes
- 3 egg yolks
- 1/8 tsp nutmeg
- black pepper
- 1 egg
- 1 tbsp cream
- Preheat the oven to 400F.
- Warm the mashed potatoes slightly to make them easy to mix. Stir in the egg yolks and nutmeg and few cracks of black pepper.
- Using a piping bag or spoons, make dollops of the potato mixture on a parchment lined baking tray.
- In a small bowl, whisk together the egg and cream.
- Brush the tops of the potato dollops with the egg wash.
- Bake 15-20 minutes until golden brown.
