There isn’t much that goes better with a Summer BBQ than fruit salad. Except maybe fruit soup.

The reasons we all love to serve fruit salad in the Summer are:

  1. It’s easy! Who wants to turn on the oven to make an appetizer, side dish or dessert in the long, humid Summer days? Not me, that’s for sure!
  2. It tastes so good! We love the bold flavors and sweet juices that ripe, seasonal fruit has to offer. There isn’t too many things I’d rather eat than fresh Summer produce.
  3. It’s refreshingly thirst-quenching. One word: Watermelon, anyone?  (that was actually two words).

Those are just the first three reasons that popped into my head. And if you ask me, they’re reason enough to mow down on fruit salad. But what if you want to take fruit salad to a whole other level? What if you want to “wow” your guests and/or think outside the apple box?

We recommend fruit soup! Why fruit soup?

  1. It’s easy!
  2. It tastes so good!
  3. It’s refreshingly thirst quenching!

Fruit soup isn’t as strange as it sounds. How many times have you downed a fruit smoothie after a trip to the gym? Or enjoyed the refreshing flavor of a classic gazpacho or cherry salmorejo soup? We’ve written before about a variety of cold soups that can be enjoyed during the warmer months and we stand behind them now: Fruit soup is the way forward! And it’s tasty to boot!

So what kinds of fruit should you include in a fruit soup? Think fruit salad, pureed and chilled.

Choose your favorite flavors, colors and textures to create intensely flavorful taste profiles or if you really want to innovate, pick a theme and run with it! Bring it to life in the dish (ingredients), on the patio (decorations, plates, accents) and the atmosphere (music, lighting). You’re limited only by your own imagination!

Before serving, top it off with a couple sprigs of mint or basil and a dollop of what you’d ordinarily use in a fruit salad dressing and you’ve got yourself one unique, delicious, interesting dish that no one will be expecting, but most certainly everyone will enjoy!
