Baked Eggs In Spinach
There are a lot of ways to cook eggs. From poaching to omelettes and, of course plain old over-easy. My favorite egg dishes are those where eggs are “submerged” in some other ingredients and cooked together so the deliciousness of eggs is brought together with other very tasty ingredients – like shakshuka. Poaching eggs in a spicy tomato sauce is so tasty. Dishes like this can be made on the stove, but we shouldn’t forget that baking is an easy way to cook eggs. When I think of baking eggs, I always think of eggs cuddled in a rich creamed spinach. Baked eggs in spinach is an easy and delicious way to get breakfast or dinner on the table in very little time.
Baked Eggs In Spinach – Cream It!
I love spinach. I am not sure why, but spinach is one of those things that really makes my mouth water. Even more so than a nice steak. A bowl of steamed spinach catches my attention every time. The truth of the matter is that it does not even have to be made fresh. A bowl of previously frozen spinach works, too. The use of spinach makes this dish even more of a favorite. With the simple addition of some ricotta and parmesan, a nice creamed spinach can be created that is the perfect cooking medium for the eggs. The rich yolks of the eggs also enhance the creaminess! NICE!
Baked Eggs In Spinach – Without The Spinach?
It is worth noting that you don’t really need the ricotta. You can simply pour cream over the spinach and season it. This is a much richer version, and it works! It is also worth noting that you really don’t need the spinach either. Eggs can be baked right in cream with a variety of nice additions like hame or cheese or both. Of course, without the spinach it really would not be baked eggs in spinach.
Baked Eggs In Spinach – So Simple!
If you want to go through the effort of making your own spinach for the baked eggs in spinach, it is simple enough. Fresh spinach is easily cooked in a large pot with a little olive oil, salt and pepper. In truth, though, frozen spinach works just fine. Frozen, creamed spinach works fine, too. If you are making it yourself, with frozen or fresh, just make sure to drain it well. A puddle of spinach water will not suit your baked eggs in spinach well!
Baked Eggs In Spinach – The Eggs!
The only thing left to discuss is the eggs. Making little impressions in the spinach to cook the eggs is easy. You can bake the eggs to your liking with the yolks coming out runny or cooked through. I prefer to cook the whole thing in a baking dish, but baking the spinach and eggs in ramekins works great, too. Doing it this way means each one can be customised as needed.

- 2 lb chopped,cooked spinach. Frozen is fine.
- 8 oz ricotta cheese
- ¼ cup of grated parmesan cheese plus a little extra
- ¼ tsp of ground nutmeg
- 8 eggs
- salt and pepper
- Preheat the oven to 350F.
- Drain the chopped spinach well and place it into a large bowl.
- Add the ricotta, parmesan cheese and nutmeg. Mix well.
- Season to taste with salt and pepper.
- Spray a 9x12in baking pan with non stick spray.
- Transfer the spinach mixture to the baking pan and spread it evenly over the bottom of the pan. Using the back of a spoon, make 8 small impressions in the spinach to hold the eggs. Crack one egg into each impression. Season the top with salt and pepper.
- Sprinkle the top with a little extra parmesan cheese.
- Bake the eggs until the spinach is hot, the egg whites are set and yolks are to your liking.
- Serve hot on top of buttered toast.
- In addition to the spinach, other vegetables or even herbs, like sorrel or basil, can be used. The ricotta and parmesan cheese can be replaced with enough cream to just moisten the spinach.
