Pantry Raid: How to Cook Eggs Over Easy

One of the first cooking skills I learned as a college student, off on my own for the first time in my life, was how to cook eggs over easy. It might not be the healthiest of meals, but it’s certainly a tasty option after waking up late on a Saturday after a good night’s sleep.

And, because eggs over easy is such a staple of cooking eggs, it’s important lesson to learn in the kitchen. Luckily, we’re pros at these things. So, here’s how to cook the perfect eggs over easy.

How to Cook Eggs Over Easy

Step One: Place a medium, non-stick pan on the stove and turn the heat on to medium low. Medium low heat helps us control the speed of cooking. We want our eggs to fry gently.

Step Two: Add 1 tbsp of butter to the pan and let the butter melt and get bubbly. Spread the butter all over the skillet. When the foaming subsides, you are ready to add the eggs.

Step Three: Crack one egg open on a flat surface to avoid shell getting in to the egg. If shell does get into the egg, don’t worry, pick it out. Open the egg, carefully depositing the egg into the pan. Repeat with another egg.

Step Four: Allow the egg white to cook until it is about 3/4 cooked about 1 – 1.5 minutes. Using a spatula, gently flip each egg over and cook the egg another 10 seconds until the white is completely cook, the yolk is still runny, but covered with a thin film of opaque egg white. The “Over-Easy” in eggs over easy means the yolk will be runny. If you do not like runny yolk, keep cooking another 1-1.5 minutes to fully cook the yolk (the FDA and USDA would be pleased). You could do like those TV chefs and try and flip the eggs without a spatula! Go ahead – unbroken yolk be damned! Its fun! and it is only eggs after all! Make sure you show the kids, they love it!

Step Five: Season the eggs with a dash of salt and pepper, to taste. Using a spatula, remove the eggs from the pan and place them on a plate, perhaps atop buttered toast, a biscuit, a rösti, hash browns, even fried rice. You get the idea.
