If any meal times deserves a whole month of celebration it is breakfast. Not only is the food good, but the food is so special that we find it totally acceptable to eat breakfast at any time of day. Nobody regrets having Captain Crunch or Lucky Charms for dinner, but serving yankee pot roast or roast chicken for breakfast would be strange. Somehow cold pizza has gotten an exception. This is because, at its core, pizza is actually a savory form of pancake with cheese and tomato. The fact that it is baked instead of griddle cooked is just a technicality.
It is easy to innovate for breakfast, too. Think of all the stimulus that has been gotten from the related worlds of lunch and dinner. The sandwich format is big in breakfast. The breakfast burrito and its cousin the breakfast wrap are very popular, too.
Thinking about breakfast opportunities using ingredients that we do not usually think of for breakfast opens up a huge potential for WOW moments. The avocado folks are trying to get into the breakfast act, Yeah and Yum! Can’t get enough avocado!
Sure, cereal won’t be passé and bacon and eggs are probably not threatened, but bringing avocado innovations to the breakfast table is a jolt of yummy for the morning meal.That creamy, nutty pear of green richness can do a lot of good in a lot of places. A breakfast smoothie? Absolutely! In a muffin?, Oh my, yes! An Avocado Breakfast Burrito? Yes, please! Avocado = Innovation and certainly WOW moments!
Of course, a classic flapjack breakfast is also just fine. Fluffy, syrupy, buttery pancakes can kick any day off right. They ares so delicious with blueberry or banana and taken to the next level with sauteed apples, mmmmm!
- 1.5 cups flour
- 3 tbsp sugar
- 1 tbsp baking soda
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 2 eggs
- 1 1/4 cups milk
- 1/2 tsp vanilla
- 2 tbsp butter, melted
- In a medium bowl, sift together all the dry ingredients.
- In another bowl whisk the remaining ingredients together.
- Pour the liquid into the dry ingredients slowly whisking until all the liquid is incorporated.
- In a large non stick pan, melt butter over medium heat. When butter is melted and bubbling ladle about 2-3 oz of batter into the pan. You can make them smaller or larger as you wish. If you are adding fruit this would be the time to do it
- When bubble holes form on top of the pancake (about 1-1.5 minutes depending on how hot the pan is), flip and continue cooking until it is cooked through (about another minute depending on how hot the pan is).
- Serve hot!
