I like summer because of the fruits that become available, especially berries. One of my favorite foods is pie. I like pie! I like pie more than cake, but only a little more. So when summer comes, you can imagine my excitement about berry pie. I especially love blueberry pie. Blackberry pie is good, too, but blueberry is especially nice. Sure, baking in the summer can be hard because it is hot, but I will gladly heat up my house to make blueberry pie. When those jammy blueberries burst and melt and are held in place by a buttery crust, I am amazed at the rich deep flavor. When you consider how to make blueberry pie, though, there is one tip – keep it simple.

How To Make Blueberry Pie – The Simple

There isn’t much to making blueberry pie and this is a good thing. The ripe berries are of course critical to the pie’s success. But so is not adding anything to them. Sugar? Yes, a little is likely needed. Starch or flour? Yes unless you don’t mind your blueberry pie to be very juicey. In truth, who gives a $#%^# if the bottom of the pie is filled with blueberry juice. One thing is for sure, if you do add a flour or starch, only a little should be added. Nobody wants a gloopy pie. I would rather have a rush of blueberry juice that needed spooning over the pie pieces than have blueberry glue. And cinnamon? Every %^&^$ and theire brother says add a dash of cinnamon. Heck, even I say to add cinnamon to blueberry baked goods like blueberry tart. But I say no to adding it to blueberry pie. And a few dabs of butter? It is butter – of course.

How To Make Blueberry Pie – The Crust

The most complex part about making blueberry pie is the crust. That is covered already here. I think a classic crust is best, but a no-roll crust is good, too. In fact, the rusticness of a no-roll might even be better. Hmmm…that will need to be pondered more.

Wait? Additions? I though it was supposed to be kept simple? It is! But don’t forget that while a piece of blueberry pie is fantastic on its own, it is made even better with a scoop of vanilla ice cream! Chocolate chip would be good, too!

Ingredients
  1. 2 pounds of fresh blueberries
  2. 1/2 cup of sugar
  3. 1/4 cup of flour
  4. One recipe of classic pie crust or 2- 9 inch pie crusts
  5. 2 tablespoons of butter
  6. Cream
Instructions
  1. Preheat the oven to 350°F.
  2. In a large bowl mix, the blueberries, sugar and flour. Stir until the blueberries are well coated. Rollout the first pie crust and place it in the bottom of a 9 inch pie pan. Pour in the blueberries.
  3. Dot the blueberries with butter.
  4. Roll out the second pie crust and place it on top of the blueberries. Crimp the pie closed.
  5. Brush top crust with cream.
  6. Bake the pie for 40 to 45 minutes until the crust is golden brown and the filling is bubbly and cooked through.
  7. Let the pie cool. Serve the pie with whipped cream or ice cream.
