Easy Avocado Recipes – Avocado Soup
The one thing I love about avocados, aside from the creamy richness, is that pretty much every avocado recipe falls into the Easy Avocado Recipes category. A lot of the complications are taken out of avocado recipes mostly because we don’t cook them. The biggest issue is finding the perfect ripe avocado and then becoming deft at slicing and dicing them. One of my favorite easy avocado recipes is cold avocado soup.
Easy Avocado Recipes – Creamy Avocado Soup
Sure, a guacamole is easy, too and so is making an avocado toast. But something about tossing a bunch of ingredients into a blender and whipping makes making a cold avocado soup seem very easy, too. Yes, you have to bring some stock to a simmer, but that really is no big deal.
Creamy Avocado Soup – The Prep
The preparation for making a cold avocado soup is very simple. As noted, simmering some stock is likely the most complicated part. Quartering an onion, chopping some cilantro and squeezing a lime are really nothing. I don’t think spooning greek yogurt into a blender qualifies as difficult either. Using a blender works great for this soup and creates a very nice velvety soup. If you want a really silky soup, pour the soup through a fine sieve then refrigerate.

Perhaps another complication of easy avocado recipes is the choice of herbs. The avocado is pretty much a blank slate. That gentle nuttiness along with the creamy goodness can be taken in so many flavor directions. A cold avocado soup can be taken in a Tex-Mex direction with the addition of garlic, lime and cilantro. It could also be taken in a French direction by using Herbs de Provence. Of course, Asian flavors work with avocados, too. A cold Avocado soup with a dash of soy and wasabi would be very tasty. How to flavor it may also depend on what you are serving with it. I like to serve a cold avocado soup with spicy black bean quesadillas so often a more Mexican flair is applied. But i don’t like to limit it. There are so many possibilities!

Cold Avocado Soup – The Recipe
- 3 ripe avocados (3/4lb avocado flesh hold back a little for garnish)- Haas is best
- 1 medium sweet onion (about 1/4 lb)- like Vdalia
- 4 cups of vegetable or chicken stock
- 1 cup of cream or fat free greek yogurt
- 1 lime
- salt and pepper
- 1/2 oz. fresh cilantro
- avocado oil (optional)
- Peel the avocado and remove the seed.
- Peel the onion and quarter.
- Finely chop the cilantro.
- Place the onion and avocado into a blender. Add the greek yogurt or cream. Squeeze in the juice of the lime.
- Bring the stock to a simmer. Carefully add the stock to the blender and blend until smooth about 1 minute. Make sure the top of the blender cap is open slightly so steam does not build up. Hold the blender cover down firmly with a dish towel.
- Pass through a fine sieve (optional, but makes a nice luxurious soup). Cool completely.
- Season to taste with salt and pepper.
- Store in the refrigerator until ready to serve. Serve cold or at room temperature.
- Garnish with diced avocado, cilantro and drizzle with avocado oil.
- Use soy cream or other cream alternative or skip it all together. Be sure to use vegetable stock.
- The can be made ahead. Store the soup in the refrigerator with cling wrap touching the surface to avoid any dis-coloration.
